How to cook Chayote Guisado:
Prep Time: 20-30 minutes
Cooking Time: 30-45 minutes
Ingredients:
2 tbsp olive oil
4 cloves garlic, minced
1 sm onion, sliced
2 fresh tomatoes, sliced
1 doz med shrimp with heads(headless optional)
1 c. shrimp juice (extracted from heads and shells of shrimp)
1/2 lb. ground pork/beef/chicken
7 reg. chayote, peeled and sliced 1 inch x 1/6 inch
1/2 tsp. ground pepper
1-2 tsp. salt or 2 tbsp fish sauce
Directions:
1. Saute garlic in oil until golden brown; add onion and stir-fry Add tomatoes and stir.
2. Add ground pork and stir-fry until brown and tender. Add the chayote, stir and continue cooking. Add the shrimp, and stir.
3. Add the shrimp juice (extracted from heads and shells of shrimp by pounding using a mortar and pestle), adding to it one cup of water. If no time, fish sauce should be good enough. Stir until it boils. When chayote is tender, add pepper and season with salt.
